What could possibly be better than a crunchy to accompany your morning cuppa? Well this super healthy but no less delicious option will do that and so much more, it’s also a fabulous breakfast on the run and a decadent snack at any time of the day.
You will need:
1 cup coconut oil
2 T honey
1 cup dessicated coconut or coconut flakes whizzed in the food processor to make them finer (this option is my preference)
1 cup coconut sugar
1/2 cup oat flour made from Heartveld Activated Oats, Organic Quick Oats or Organic Whole Rolled Oats by whizzing in the food processor or blender
1/4 cup tapioca flour
1/4 cup corn starch
1 pinch nutmeg
Mix together all the dry ingredients except the bicarb.
Melt the coconut oil with the honey, once melted add the bicarb.
Pour the coconut oil into the dry ingredients and mix well.
Press into a swiss roll tin and bake at 160ºC for 35 minutes or until golden brown.
Score into bars and allow to cool completely.
