It’s been a while since I’ve blogged, I’m busy working on a mega post at the moment that I’ll put out soon bit I just had to share this recipe with you all quickly!! Yesterday my son requested “chocolate food” for dinner, this is fournado code for cake, well on our house anyway. Our oven recently passed away so baking is out of the question but I’ve been wanting to play around with steaming so this was a great opportunity to try something out. I chose a paleo brownie recipe from Grain Free Foodie and tweaked it by using macadamia flour instead of almond and adding a little baking powder and then I steamed it in the rice bowl of my steamer. The best part was that I could mix the batter in the rice bowl too, major score for less cleaning up to do. The brownies came out perfectly, dense, chocolatey and fudgey as brownies should be. You could also steam these in silicon cupcake cups to make little individual cupcake brownies. This is also a fabulous recipe for kids to try too as there’s no oven to worry about.
To have all of this deliciousness for yourself you will need:
1 1/4 cup macadamia flour
2/3 cup Cape of Good Hope Honey
1/4 cup melted coconut oil
3 dessert spoons of Dutch alkalised cocoa powder
1/2 t baking powder
Pinch of salt
Place all the ingredients together into the rice bowl of the steamer, mix well. Cover rice bowl with a piece of baking paper folded double or a piece of tin foil, place into the top steamer basket and steam for an hour.
Serve as is or top with cream or ice cream.
