Stuffed Beef Burgers

Yes I know it sounds a bit ridiculous but I was thinking about new ways to use burger patties and this is what I came up with and it is a TOTAL WINNER!! And it’s quick and easy too. I filled these ones with mushroom, onion, baby spinach and mozzarella cheese but the filling options are pretty endless, good old spinach and feta will work well, tomato, olive and bacon, creamy mushroom and spinach, a big dollop of pesto or olive tapenade for super quick options.

To make 4 stuffed burgers you will need:

8 Waylands Pasture Raised Beef Burgers, or Bacon Burgers, or Kudu Burgers

2 onions, sliced

8 cube (2cm) and 8 slices of Mozzarella per portion (not essential)

1 punnet of mushrooms, fairly finely chopped

Salt and pepper to taste

coconut oil for cooking

 

Method:

Sweat the onions in coconut oil until translucent, add the mushrooms and cook on a high temperature until all the liquid has evaporated.

Add the spinach and just wilt.

Season to taste.

Oil a baking sheet.

Preheat your oven to 200 degrees.

Place 4 burgers onto the baking sheet, push down in the centre of each burger to make a small depression. Fill each depression with a tablespoon of the mushroom mixture, place a cube of cheese on top followed by another tablespoon of mushroom mixture. take a burger patty and gently squeeze the centre a little thinner and place it on top of the cheese topped patty, squeeze down the edges to seal, repeat with the other 4 patties and filling.

Bake for 20 minutes and serve with the rest of the filling mixture as a side dish or with potato rostis or sweet potato mash or fries.
